This “cake” is great for a summer lunch. Although it does not look like, it is very satiating. It could be shared between four people. It is an excellent source of protein (see: amino acid score for chickpeas), complex carbohydrates as well as vitamins and minerals.
5 whole grain tortillas,
2.5 cups homemade hummus (click for recipe),
15-18 green olives, sliced in discs,
2 leaves lettuce,
1 Roma tomato, sliced,
½ avocado, sliced in half-moons,
A handful parsley leaves, chopped.
Please read the labels carefully when buying tortillas. There is a lot of junk products out there. Please read the “Bread” section for detailed information on how to buy whole grain products. Olives from a glass jar are much healthier than canned ones. A toxic metal – aluminum – from the cans leaches into the food and gets into your body and may contribute to Alzheimer’s disease. Also, the can lining is a xenoestrogen. The pitted olives with nothing in them are healthier. The ones stuffed with pimento usually contain preservatives.
First floor: spread some hummus on the first tortilla and place tomato slices on it. Tortillas number two, three and four will have hummus on both sides, a bit thinner layer on the bottom part that goes on the topping of the previous tortilla and more on the upper side where the next layer of topping will be placed. This way it sticks better together.
Second floor: spread some hummus, add olive slices and a lettuce leaf with the large stem removed, top it with the next tortilla with a thin layer of hummus on the bottom side of it.
Third floor: spread some hummus, add avocado slices and top it with the next tortilla with a thin layer of hummus on the bottom side of it.
Fourth floor: just like in case of second floor, spread some hummus, add olive slices and a lettuce leaf with the large stem removed, top it with the next tortilla with a thin layer of hummus on the bottom side of it.
Spread a little bit of hummus only on the bottom side of the last tortilla, place it on the top of the whole cake and sprinkle it with fresh parsley leaves.
I stopped at five tortillas, but you may of course add as many layers as you wish.
